Stuffed Tomatoes with Chicken Quinoa

This recipe is not only tasty, it looks gorgeous and is full of amazing flavours!

Ingredients

3 ½ cups cooked quinoa
5-6 tomatoes, seeded and tops cut
Celery- 1 stalk finely chopped
200 grams chicken breast minced
Garlic- 4-5 cloves chopped
Onion-1 medium, finely chopped
Fennel seeds- ½ teaspoon
Chili powder- ½ teaspoon
Salt to taste
Black pepper powder- 1 teaspoon
Olive oil- 3 tablespoon

Method

Heat oil in a pan and saute onion, garlic, chilli powder. Stir the chicken and let it cook for a while. Add fennel seeds, salt, pepper and cover for a while till its soft.

Boil quinoa and strain. Once the chicken is done, combine that chicken with quinoa, celery and mix well.

Now take the tomatoes and fill the quinoa and chicken mix into each tomato. Put it on a baking dish, cover with the cut tops of the tomatoes, and bake (for 20-25 minutes) until the tomatoes are soft. Your dish is ready to serve.

Ingredients

Baby potatoes- 500 grams
Parsley- chopped 3 tablespoons
Mint-  chopped 3 tablespoons
Chives- chopped 3 tablespoons
Olive oil- 5/6 tablespoons
Lemon juice- 2 tablespoons
Skinless chicken breasts- 500 grams (cut into cubes)
Onion- 1 red, cut into cubes
Red bell pepper- 1 cut into cubes
Yellow bell pepper- 1 cut into cubes
Lemon- 1
For the relish
Tomatoes- 8 ripe
Green chillies- 2 chopped
Garlic cloves- 2 small chopped
Pepper powder and salt to taste
Olive oil- 4 tablespoons
Apple cider vinegar- 2 tablespoons

Method

Heat water in a pan and let it come to a boil. Add some salt in it along with the potatoes for 10 minutes. Drain and leave them to cool.

Take a large bowl and add chopped parsley, mint, chives, lemon juice, olive oil, salt and pepper. Add the chicken cubes, bell peppers, onions, potatoes and mix well.

To make the dip, finely chop the tomatoes, and put it in a blender with chopped garlic, chillies, vinegar, oil, salt and pepper powder. Keep that dip in a bowl aside.

Now, tuck everything into the skewers and barbecue over a medium high heat for 5 minutes on either side. Flip till cooked. Serve with lemon squeezed from the top of the chicken and veggies along with the dip.

Chicken breast- 600 grams (cut into diagonal strips)
Basil- 1 bunch chopped only leaves
Chestnut mushrooms- 120 grams sliced
Red Chillies- 2 seeded and sliced into thin strips
Garlic- 3-4 cloves chopped
Ginger- 2 cm piece chopped
Olive oil- 2 tablespoons
Thai red curry paste- 2 teaspoons
Chicken stock- 1 cup
Lemon- 2
Salt and pepper to taste

Method

Heat oil in a pan and saute chicken for a few minutes. Add the garlic, ginger, chillies and cook till it’s softened. Add the mushrooms and Thai red curry paste and stir well for some time. Add lime juice and the chicken stock and let it sizzle. Stir occasionally to check whether the chicken is cooked. Then add ¾th of the basil leaves and remove from heat. Now add the remaining basil leaves and serve hot with rice or whole wheat or rice noodles.

Lemon- 1 juiced

Marinade the chicken with 1/2 lemon juice, salt, and pepper. Heat olive oil in a pan and saute the chicken till soft. Add the other 1/2 lemon juice, pepper as per taste and dried oregano. Saute for a few more minutes till the chicken is tender. Remove from the heat and garnish with parsley.
