  • Khoya- 1 cup crumbled
  • Powdered brown sugar- 1/4 cup

  • Pistachios- 50 grams blanched and 10-15 finely sliced (for garnishing)
  • Saffron strands- 4-5 nos

Method

Take a non-stick pan. Add khoya and powdered sugar. Stirring continuously, cook it on a simmer for 5-6 minutes. Add elaichi powder and mix well. Remove it from the pan and let it cool for 10-15 minutes. Make two portions of the mixture—one is ¼ th and the other is ¾ th. Add saffron in the ¾ th mixture and mix well. Add pistachios and mix in the ¼ th portion. Make small balls with the pistachio mix and a little larger balls with the saffron mixture. Now, take a saffron mixture ball and flatten with your palms. Put a pistachio ball in the center and close it putting the edges together. Shape it like a rounded and flattened ball. Now, garnish with the blanched pistachios.  

2. Dry Fruit Laddu

  • Coconut grated ½ cup
  • Pistachios- 10-12
  • Walnuts- 10-12
  • Raisins- 10
  • Peanuts- 15
  • Sesame seeds- 1 tsp
  • Pumpkin seeds- 1-2 tsp
  • Almonds- 10-12
  • Dates- 250 grams
  • Choco chips- white and dark chocolate

Method

Microwave the nuts and dates in separate bowls for a couple of minutes till the dates turn soft and the nuts becomes crispy. Blend the dates in a blender or you can kneed them to dough. Crush the nuts coarsely as well. Now make small balls out of the dates and roll them on nuts, choco chips and grated coconut.

3. Sugar free Dates & Pistachios Laddoo

Ingredients

  • Deseeded Dates – 2 cups 
  • Anjeer or Figs – 10 nos.  
  • Chopped Pistachios – 1 cup
  • Roasted Sesame or til – 1 tbsp 
  • Ghee – 3 – 4 tbsp
  • Edible rose petals – ½ cup 
  • Warm Water – 1 cup 
  • Edible silver foil – 1 sheet

Method

Soak the seedless dates and figs in water for an hour and grind them in a mixer. Add very little water in the mixer if needed and keep the paste aside. Chop the pistachios coarsely and keep aside. Now heat a kadhai and add a tablespoon of ghee in it. Put the date and fig paste in the kadhai. Keep stirring the mixture in the kadhai and cook till the mixture solidifies a little. Keep adding ghee little by little during cooking to avoid coarse texture and burning. Now add the chopped pistachios, edible rose petals, and sesame seeds. Once these are evenly distributed in the mixture, keep it aside and let it cool. Once the mixture is completely cool, take some ghee on your hands and make them into balls. Garnish them with rose petals and edible silver foil. Refrigerate this for a couple of hours before serving. 

4. Green gram laddoo

Ingredients

  • Green gram roasted – 1 cup
  • Cardamom powder – 1 tsp
  • Broken Cashew Nuts –  a handful 
  • Jaggery -7-8 tbsp
  • Ghee – 3 – 4 tbsp

Method

Dry roast the green gram dal in a dry tawa and put it in a grinder to make fine powder. Add cashew nuts, ghee, cardamom powder, melted jaggery and mix it well to get a dough like consistency. Now take some amount of the dough and make laddos. Your healthy dry sweets for Diwali is ready to serve.

5. Rawa Anjeer rolls

  • Rawa – 1 cup
  • Broken cashew – for garnishing
  • Broken pistachios – for garnishing
  • Milk – 1 cup
  • Anjeer or fig – 1/2 cup
  • Deseeded dates – 1/2 cup

  • Ghee – 1 tsp

Method

Dry roast the rawa. Now add the rawa, anjeer, jaggery, and dates in a mixed and make a coarse powder. Add milk in a kadhai, add the mixture in it and keep stirring till it becomes like a dough. Cool it completely and grease your hands with ghee before making the rolls. Once the rolls are made, run them through the broken pistachios and cashew nuts.
