Here are the 3 easy & healthy sandwich recipes
1.Vegetable Pickle sandwich
6 Whole wheat or brown bread slices
2 large Potatoes boiled and grated
1 teaspoon red chilli flakes
Salt to taste
2 teaspoons black pepper powder
1 of each green, yellow and red bell pepper chopped
2 tablespoons of melted butter
1 ½ Onions sliced in rings
2 Tomatoes sliced
2 Cucumbers thinly sliced
6 Pickled gherkins sliced
Thyme-1/2 teaspoon, brown sugar-1/2 teaspoon, Apple cider vinegar, chilli flakes-1/2 teaspoon, salt, yogurt- 2 tablespoon.
Mash the potatoes in a bowl. Add salt, chilli flakes, black pepper powder, bell peppers and mix it well. Grill the breads applying little amount of butter. Now place the mixture on the bread, put slices of onions, pickled gherkins, tomatoes, cucumber and cover with another slice of bread. Then, grill the sandwich. Make a dip mixing a tablespoon of yogurt, a pinch of salt, thyme, chilli flakes, a teaspoon of apple cider vinegar, ½ teaspoon brown sugar. Give it a good mix and your vegetable pickled sandwich is ready to be devoured.
6 whole wheat bread/brown bread slices
1/2 cup grated paneer
1/2 cup cabbage shredded
1/2 cup carrot grated
Chopped coriander leaves
2 small green chilies chopped
1 teaspoon Black Pepper
4 tsp low fat butter for cooking
2 tablespoons of non-flavoured yogurt
3 olives sliced
Salt to taste
First prepare the stuffing that needs to be put in the sandwich. For this, mix shredded carrot, cabbage, coriander leaves, paneer, chilies, black pepper, olives and yogurt. Place equal portion of this stuffing on one bread and place another bread on the top of it. Make three such stuffed breads. Now pre-heat the grill, apply little butter on both sides of the bread slices and grill both the sides. Serve hot!
3.Spicy Chicken sandwich
500 grams skinless and boneless chicken breasts
1/2 teaspoon garam masala powder
1/2 cup thinly sliced English cucumber
1/2 of red, yellow and green bell peppers grilled
3/4 cup fat-free non-flavoured yogurt
1 tablespoon coriander leaves chopped
1 tablespoon mint leaves
2 teaspoons lemon juice
2 teaspoon black pepper
6 slices of brown bread
1 medium size tomato sliced
1 medium size onion thinly sliced
Olive Oil for cooking
Preheat the grill to medium-high temperature. Marinate chicken with lemon juice, garam masala powder, black pepper powder and salt. Grill the chicken till it turns golden brown. You can use regular non-stick tawa as well. If you are cooking on a tawa, smear one teaspoon oil in the pan and cook the meat on a low heat. On the other hand, mix cucumber, grilled bell peppers, yogurt, black pepper powder, lemon juice, coriander and mint leaves, a pinch of garam masala powder, pepper and salt in a bowl. Cut thin slices of the chicken. Put this mixed veggies and chicken on one bread and cover with the other. Your yummy chicken sandwiches are ready!
